This photograph showcases a jerky rack smoking meat in a forested area of Eastern Oregon in 1929. The smoke billows from the rack, partially obscuring the surrounding trees and bushes. The jerky rack used appears makeshift, constructed from sticks and cloth.
In the early 20th century, jerky-making was a common practice in rural areas of the Pacific Northwest, particularly among those who traveled extensively. Smoking meat was an essential method of preservation before the advent of modern refrigeration, ensuring that provisions could last during long journeys or against harsh weather conditions. This image captures a traditional practice that was integral to survival and a way of life during this era.
Visible in the image is the text “Jerky Rack.” This caption succinctly describes the main subject of the photograph, emphasizing the jerky-making process displayed.
