The selected region showcases a professional culinary set containing a Victorinox honing steel, a Misono Sujihiki slicing knife, and a serrated bread knife.🔪 Tools in This Collection
- Victorinox Honing Steel (Left): A classic Victorinox Round Honing Steel with a textured black plastic handle, safety finger guard, and a metal loop end for hanging storage. It aligns microscopic metal teeth along the blade edge to maintain everyday sharpness.
- Misono Sujihiki / Slicer (Center): A premium Misono Molybdenum Steel Slicing Knife featuring a long, narrow profile and triple-riveted western-style handle. This style minimizes friction when pulling through roasted meats, raw fish, and large proteins.
- Serrated Bread / Utility Knife (Right): A classic scalloped utility knife with a triple-riveted handle. Its wavy edge cleanly bites through hard bread crusts or soft-skinned produce like tomatoes without crushing the interior.
🔍 Breakdown of the Blade's Engraving
- Misono HANDMADE Logo: Features the brand's signature emblem, which consists of a stylized letter 'M' layered over four thin, slanted vertical bars.
- Japanese Kanji (ステンレスモリブデン鋼): Translates directly to "Stainless Molybdenum Steel". This specifies the high-carbon, stain-resistant formulation used for this specific product line.

- VERITABLE SABATIER: Authenticates that the knife belongs to the historic Sabatier legacy originating from the famous Thiers cutlery region in France.
- CHEF AU RITZ: Represents a highly sought-after vintage commercial product line produced around the 1950s to 1970s. The faded cartoon illustration etched in the center represents a stylized portrait of the legendary French chef Auguste Escoffier, who famously revolutionized French cuisine at the Ritz Hotel.
- BRESWICK PARIS: Refers to the specific distributor or cutlery house (Breswick) based in Paris that originally marketed and retailed these professional-grade lines.
- STAINLESS: Engraved vertically on the right side, confirming this specific piece was crafted from stain-resistant stainless steel rather than reactive carbon steel.
The image shows the molded "FORSCHNER" mark on the handle of your honing steel.🔍 History of the Forschner Mark
- The Victorinox Connection: R.H. Forschner was the exclusive importer and distributor of Swiss-made Victorinox cutlery in the United States for many decades.
- The Brand Evolution: Because the name became synonymous with high-quality butcher and chef tools in North America, Victorinox stamped their commercial kitchen lines—including knives and sharpening steels—as "Victorinox Forschner" or simply "Forschner" up until the mid-2000s, when they consolidated everything strictly under the Victorinox brand name.
